• 1 Carré or rack of lamb 12 ribs

• 25 gr. of pine nuts
• Salt and pepper
• 1 Apple
• 1 Granada
• ¼ pineapple
• 2 tangerines
• Romero
• Juice of ½ orange.
• Ginger
• 1 Dl of beef broth

Elaboration

Clean the rack of lamb of the excess fat and repel the bone from the ribs Cut into pieces of two ribs.
Season and brown the lamb on both sides. Put the pieces on a tray. Pound some pine nuts in a mortar, adding oil and honey. Paint the lamb with this preparation and put in the oven at 200ºC for 5 min.. Remove and leave to rest in a warm place.

For the rosemary sauce
We roast the leftover ribs and deglaze with wine and brandy. We put the juices in a saucepan with meat broth, minced garlic and rosemary. Reduce the sauce giving the point of salt and pepper.
Cut the pineapple and apple into cubes. Sauté them and add the orange juice and grated ginger. Put the tangerine and the pomegranate together.
Serve the lamb giving it a touch of gratin before serving. We put the sauce and the fruits.
