Elaboration

For the duxelle
Sauté the onion, add garlic and thyme and bay leaf. Add the chopped mushrooms, sauté and add the liquid cream,reduce. Drain and let cool.

For the chive crepe
Pour all the ingredients except the chives into a blender glass and blend them, add the chopped chives and rectify the salting. Let rest 30 minutes and make the crepes.

For the sirloins
Brown the sirloins, previously seasoned 40 seconds on each side remove them from the heat and let them rest.
