Christmas cooking: Sardina with Basil, onion and four cellars for an ideal pairing
Today we propose another Christmas dish from the Cooking and Bakery's School, Terra d'Escudella… SARDINA, BASIL AND LEMON SKIN WITH FRIED ONION FLOWER WITH DRIED TOMATO ALL I OLI, to enjoy this dish, We need the following ingredients:
For the onion flower
• 4 sweet white onions
• 300 g. Of flour
• 4 c.s of breadcrumbs
• c / s of oregano
• c / s of pepper
• c/s de Chile and polvo
• Sunflower oil
• Ice
For the sardine
• 6 sardine fillets
• 6 Basil leaves
• 4 brick pasta sheets
• 2 lemons
• 50 g. sunflower oil
For the dried tomato all i oli
• 150 g. Of olive oil
• 150 g. sunflower oil
• 1 egg
• c / s of dried tomato
• salt and pepper
Elaboration
For the onion flower
Peel the onion trying not to cut the peduncle and cut it into a flower shape. Let the sliced onion rest in ice water for a few 30 minutes. Then we will remove it and drain it. We prepare the breading by mixing all the ingredients of the recipe. Flour the onion making sure it reaches all the layers and fry it in plenty of hot oil until golden brown. The onion must be completely submerged in the oil. We remove it and drain it on absorbent paper.
For the sardine
Dissolve 95 g. of boiling water with 8 g. of salt and marinate the sardine a few 5 minutes. We mix 50 g. of sunflower oil with a little lemon juice and pepper and let them marinate 30 minutes. Divide the brick pasta into 4 parts and place a sardine fillet, a basil leaf and lemon zest. We hook the outer part with water to ensure that it does not open when fried. we fry it in abundant hot oil at 180 º C. until it has a nice golden color. We drain it on absorbent paper.
