We start December with a Christmas dish from the School of Cooking and Pastry, Terra d'Scudella... SALMON CANNELLONI WITH LEMON, to enjoy this dish, We need the following ingredients:

Ingredients
• 12 sheets of cannelloni
• 200 gr. of fresh salmon
• 200 gr. fresh cheese
• 1 lemon
• 10 gr. of pine nuts
• Dill
• Salt and pepper
Sauce ingredients
• 250 ml. milk
• Lemon peel
• 10 gr. d eroux blanco
• Sal, pepper and dill

Elaboration

Cook the cannelloni sheets as indicated on the package. Remove and stretch on the oiled marble. We will clean the fresh salmon of skin and bones and chop. We mix with the fresh cheese. Season and add dill, toasted pine nuts and lemon zest.
Fill the cannelloni with the farce and place on the tray to heat.
Preparation of the sauce Bring the milk to a boil, turn off and add the lemon peel. We keep some 15 minutes for it to flavor. We remove the skin. Bring back to a boil and dissolve the roux. Lower the temperature and stir continuously until obtaining a homogeneous béchamel. Season and decorate with dill. We cover over the hot cannelloni. Garnish with some toasted pine nuts and cherry tomato
