Hunting Kitchen: Rabbit with onions and two wines for an ideal pairing
Today we recommend the hunting kitchen of the School of Cooking and Pastry, Terra d’Escudella… Our dish of the day… ONION RABBIT WITH RED VERMUTH, to enjoy this dish, We need the following ingredients:
1 rabbit
500 gr. of onion
150 gr. carrot
250 gr. of vermouth
1 garlic head
100 cl. Of olive oil
Laurel and thyme
Salt and pepper
Elaboration
Cut the rabbit to eighths.
Season and brown on both sides in a saucepan with hot oil..
Remove and add the garlic to the casserole, julienne cut onion and sliced carrot.
Cook over medium heat for 15 minutes.. Go stirring from time to time.
add the bay leaf, thyme, el vermouth.
We put the rabbit and cook 15 more minutes, Add salt and pepper.
